I think, all in all, about five people have played Darth Vader. One voiced him, one was in the suit, one did the light saber fights, yet another was responsible for his famous breathing....and then someone did some special edition stuff with him.

Yes, however unlikely it may seem, I am a SW freak.

James Earl Jones voiced Darth Vader in Episodes III, IV, V, VI
Sebastian Shaw was the face of Darth Vader in Episode VI
Jake Lloyd was Anakin Skywalker in Episode I
Hayden Christensen was Anakin Skywalker in Episodes II, III, VI (DVD edition)

The breathing was kind of another person though, as it was the sound designer blowing air into a scuba mask... but he's not technically credited as one of the many people who have played Vader.
